Sourced from his fourth-generation family farm in Shizuoka Prefecture, this limited-production single-cultivar matcha displays extraordinary vibrant colour, complex umami depth, and a luxuriously smooth finish.

WHY YOU'LL LOVE IT

Mr. Hattori's farm operates sustainably, using solar panels to provide the traditional shade required during the final weeks of growth—these panels simultaneously generate renewable energy for the local community. The plants are grown pesticide-free and nourished with organic compost from the surrounding area, creating a closed-loop system that honours both tradition and environmental responsibility.

Goko (also spelled Gokou) is a highly regarded cultivar from Kyoto, known for its deeply umami profile, floral notes, and dark green colour. Extended shading leads to high chlorophyll and theanine content, creating a matcha with presence—bold, complex, and luxurious. The thick, full-bodied mouthfeel and pronounced umami are complemented by soft floral and nutty sweetness.

Reserved for the most discerning matcha enthusiasts and special occasions, this is matcha at its absolute finest. The youngest, most tender Goko leaves are hand-selected during first harvest and stone-ground in small batches to order. The attention to detail in cultivation, harvest timing, and stone-grinding process creates a sensory experience beyond comparison.

HOW TO USE
  1. Sift 1-3g (one perfect scoop) of matcha into your bowl
  2. Add 60-80ml of hot water (70-80°C)
  3. Whisk briskly in a zigzag motion until frothy
